Tortellini Sausage Soup (Print Version)

# Ingredients:

01 - 1/2 medium onion, diced.
02 - 4 minced garlic cloves.
03 - 16 oz Italian sausage.
04 - 2 medium carrots, chopped thin.
05 - 2 diced celery stalks.
06 - 1 can (28 oz) of crushed tomatoes.
07 - 1 can (14 oz) diced tomatoes, including liquid.
08 - 4 cups of chicken stock.
09 - 2 packs (9 oz each) of refrigerated cheese tortellini.
10 - 3/4 cup of optional heavy cream.
11 - Salt and black pepper, as needed.
12 - 2 cups fresh spinach, pressed down.

# Instructions:

01 - Cook sausage with onions for about 7 minutes, stirring to break it up. Remove any grease if needed. Stir in garlic and let it cook 30 seconds more.
02 - Move sausage mixture, celery, carrots, tomatoes (both cans), and chicken broth to the slow cooker.
03 - Set to LOW for 7 to 8 hours or HIGH for 4 to 5 hours.
04 - Toss in tortellini, spinach, and add the cream if you're using it. Switch to HIGH, stir every now and then, and season with any extra salt or pepper.

# Notes:

01 - Finely chopping carrots speeds up cooking.
02 - Use ground sausage or remove it from casings.
03 - Swap sausage with spicy if you'd like heat.
04 - Leftovers soak up broth; add more when reheating.
05 - Tastes better fresh.
