Boursin Chicken (Print Version)

# Ingredients:

01 - One tablespoon of avocado oil.
02 - Four thin-cut chicken breasts without skin or bones.
03 - Half teaspoon of mustard powder.
04 - Half teaspoon of garlic powder.
05 - Half teaspoon of dried oregano.
06 - Half teaspoon of dried parsley.
07 - Half teaspoon of salt, split up.
08 - Freshly ground black pepper according to your liking.
09 - Two tablespoons of butter.
10 - One small shallot, finely chopped.
11 - One clove of garlic, finely chopped.
12 - Quarter cup of dry white wine.
13 - One cup of chicken broth.
14 - One 5.2 oz package of softened Boursin cheese.
15 - Half cup of half and half.
16 - Third cup of freshly grated Parmesan cheese.
17 - Two fresh sprigs of thyme.
18 - Two teaspoons of dried parsley.

# Instructions:

01 - Rub the chicken with pepper, salt, garlic powder, oregano, mustard powder, and dried parsley.
02 - Pour oil into a big non-stick pan and turn heat to medium-high. Brown the chicken for about 3-5 minutes on each side until done inside. Set aside on a plate.
03 - Drop butter into the same pan. Cook the chopped shallots and garlic until they turn clear, around 3 minutes. Pour in the wine and scrape the tasty brown bits from the bottom. Let it bubble down to half.
04 - Pour in the broth and add the Boursin cheese. Stir until the cheese melts and everything gets thicker. Add in the half and half, Parmesan, thyme, and dried parsley. Let it simmer for 5 minutes.
05 - Put the chicken back in the pan and warm it up in the sauce. Taste and add more seasoning if you want.

# Notes:

01 - This yummy sauce works great with fish or steak too.
02 - Pick a white wine you'd happily drink yourself.
