Coat a 9-inch springform pan with nonstick spray or butter.

Stir together melted butter and cracker crumbs. Press mixture firmly into the bottom and along the sides of the pan. Pop it in the fridge for 45 minutes to 1 hour.

Combine cream cheese, sugar, mandarin orange pieces, and vanilla in a stand mixer or use a hand mixer. Whip until the texture is smooth and creamy.

Carefully fold in whipped cream until blended well.

Pour creamy filling over the chilled crust and smooth out the top. Pop it in the freezer for at least 4 hours to set.

Move to the fridge for 30 minutes right before serving. Add whipped cream and orange slices to decorate.

Use a knife warmed under hot water to make clean slices.
