Creamy Chicken Skillet (Print Version)

# Ingredients:

01 - 1.5 pounds chicken thighs, skinless and boneless.
02 - 1 teaspoon Italian herbs mix.
03 - 1.5 teaspoons smoked paprika.
04 - 3 cups fresh spinach leaves.
05 - 5 tablespoons ghee or butter.
06 - 1 cup diced white mushrooms.
07 - 2 tablespoons finely chopped garlic.
08 - 1 medium yellow onion, chopped.
09 - ½ cup heavy cream or half-and-half.
10 - 1 cup chicken stock.
11 - ½ cup grated mozzarella.
12 - 1 pound of potato gnocchi.
13 - Parsley, parmesan, chili flakes for topping.

# Instructions:

01 - Sprinkle the chicken with paprika, salt, and pepper. Sear it in 2 tablespoons of butter until browned, about 5-10 minutes for each side.
02 - Melt the rest of the butter in the pan. Toss in the garlic, onions, mushrooms, and seasoning. Stir around until everything softens up.
03 - Pour in the stock first. Whisk in the cream while stirring. Gradually add mozzarella until the mixture thickens.
04 - Stir the spinach and cooked gnocchi into the skillet. Place the chicken back in and let it simmer for 2 minutes. Add garnishes and enjoy.
