Creamy Chicken and Gravy (Print Version)

# Ingredients:

01 - 1 medium onion, diced.
02 - 1 tablespoon olive oil.
03 - 1 tablespoon butter.
04 - ½ teaspoon black pepper.
05 - ½ teaspoon kosher salt.
06 - ¼ teaspoon poultry seasoning.
07 - 1½ lbs chicken breasts, sliced thin.
08 - ¾ teaspoon fresh thyme (or ¼ teaspoon dried thyme).
09 - ¼ teaspoon kosher salt.
10 - ½ teaspoon black pepper.
11 - 1¼ cups chicken broth.
12 - 3 tablespoons flour.
13 - 3 tablespoons butter.
14 - 1-2 tablespoons plain Greek yogurt.
15 - Warm mashed potatoes.

# Instructions:

01 - Warm olive oil and butter in your skillet. Toss the onion in and sauté for around 5 minutes. Season chicken using the spices, then cook each side for about 4-5 minutes until golden. Take out the cooked chicken and onion, and keep them warm.
02 - On low heat, melt the butter. Stir in the flour and cook for just a minute. Slowly pour in the broth while whisking until it's smooth. Mix in the thyme, salt, and pepper, then let the mixture thicken for 2-3 minutes.
03 - Put the chicken back in the pan. Cover it and let it simmer for 3-4 minutes. Remove from the heat and gently mix in the yogurt. Spoon it over mashed potatoes to serve.
