Cranberry Loaf Cake (Print Version)

# Ingredients:

01 - ½ cup frozen cranberries.
02 - ¼ cup cranberry pie filling.
03 - ¼ teaspoon orange zest.
04 - 2 cups flour.
05 - ¼ teaspoon baking powder.
06 - 1 teaspoon salt.
07 - ¾ cup sugar.
08 - 1 teaspoon baking soda.
09 - ½ cup almond milk.
10 - ½ cup powdered sugar.
11 - 1 overripe banana.
12 - ¼ teaspoon vanilla essence.
13 - ½ cup Aranciata Rossa sparkling water.
14 - ½ teaspoon pumpkin pie spice.
15 - 1½ tablespoons Aranciata Rossa.

# Instructions:

01 - Start by getting your oven heated to 350°F. Combine salt, sugar, baking soda, flour, and baking powder in a mixing bowl.
02 - Stir in the mashed banana, almond milk, sparkling water, frozen berries, and cranberry filling. Blend it all together until smooth.
03 - Pour the batter into a loaf pan, give it a swirl if you'd like. Pop it into the oven for about 35 minutes. Check by poking with a knife—it should come out clean.
04 - After baking, let it sit in the pan till it's easy to handle. Then switch to a cooling rack for an hour.
05 - Whisk the powdered sugar, Aranciata Rossa, spice blend, orange zest, and vanilla together. Pour over the cake after it's cooled.

# Notes:

01 - Frozen cranberries work better than dried ones.
02 - It's fine to use whole cranberry sauce if you don't have filling.
