Toss the cottage cheese and self-rising flour into a mixing bowl. Use a spatula or spoon to mix everything until a soft, sticky dough comes together. If it's still too sticky, sprinkle in a bit more flour, one tablespoon at a time, until it's easy to handle.

Sprinkle flour on a clean surface, then dump the dough onto it. Cut the dough into 4 even parts. Flatten each piece—either with your hands or a rolling pin—into an oval or circle about a fourth of an inch thick.

Grab a non-stick pan or griddle and heat it on medium. Drop a flatbread in once it's hot and cook for 2-3 minutes on each side. You're looking for golden brown spots and fully cooked bread.

Serve the flatbreads straight from the pan while they're warm. Eat them plain or pile on toppings like avocado, hummus, smoked salmon, or even honey drizzle.
