Chicken Gnocchi Soup (Print Version)

# Ingredients:

01 - 1/4 cup plain flour.
02 - 28 ounces of chicken stock.
03 - 1 cup cooked, chopped chicken breast.
04 - 1 tablespoon of olive oil.
05 - 4 tablespoons of butter.
06 - 1 cup of finely diced onion.
07 - 1/2 cup finely diced celery.
08 - 2 minced garlic cloves.
09 - 1 quart of half-and-half.
10 - 1/2 teaspoon dried parsley flakes.
11 - 1/2 teaspoon thyme, dried.
12 - 1/4 teaspoon (optional) of nutmeg.
13 - 1 cup shredded carrots.
14 - 1 cup chopped spinach.
15 - 16 ounces of packaged gnocchi.

# Instructions:

01 - Melt the butter with the olive oil. Sauté the garlic, celery, and onion until the onion looks clear.
02 - Mix in your flour and cook briefly, about a minute. Add the half-and-half, let it heat up gently. Stir in broth, letting it simmer again.
03 - Sprinkle in the seasonings, toss in your veggies, and add the chicken and gnocchi. Warm everything up and adjust the seasoning as needed.

# Notes:

01 - Rotisserie chicken works great.
02 - Use more or less thyme as you like.
03 - Cut big gnocchi into smaller chunks if needed.
04 - Salt however much you like.
