Chewy Peppermint Cookies (Print Version)

# Ingredients:

01 - 1 1/4 cups white chocolate chips.
02 - 6 tablespoons crushed peppermint pieces.
03 - 1/2 teaspoon baking powder.
04 - 1/2 teaspoon salt.
05 - 1 cup unsalted butter, softened.
06 - 1 teaspoon baking soda.
07 - 2 3/4 cups plain flour.
08 - 1 large egg.
09 - 1 teaspoon vanilla flavoring.
10 - 1 cup sugar plus 2 extra tablespoons.
11 - 2 tablespoons brown sugar, light.
12 - 1 teaspoon peppermint flavoring.

# Instructions:

01 - Set your oven to 350°F and get baking trays ready with parchment. Stir together the dry stuff in a bowl.
02 - Blend the butter and sugars till fluffy, then add in the egg and flavorings. Slowly mix in the dry bowl contents till it's all combined.
03 - Stir the white chocolate pieces and crushed peppermint into the dough till spread out evenly.
04 - Scoop out rounds of dough, about 1½ tablespoons each. Bake for 7-9 minutes, just till the edges get a hint of golden.
05 - Leave the cookies on the tray for 4 to 5 minutes to settle, then move them to a cooling rack.
