Grease a 9x13 pan with butter and leave it for later.

In a large pot, stir sugar, butter, corn syrup, and cream over medium heat. Keep going until it hits 240°F, which can take about half an hour.

Take it off the heat and mix in both the food coloring and cinnamon oil.

Pour it into the buttered pan. Let it cool to room temperature first, then pop it in the fridge to harden.

Bring it to room temperature for 10-15 minutes. Cut it up and wrap the pieces in wax paper to keep fresh.
