Mashed Potato Puffs (Print Version)

# Ingredients:

01 - 2 cups of mashed potatoes, softened to room temperature.
02 - 3 eggs, whisked well.
03 - 1 cup of shredded Monterey Jack cheese, divided into portions.
04 - A quarter cup of chopped fresh chives.
05 - Season with salt and pepper as needed.
06 - Optional: Sour cream for serving.
07 - Extra sliced chives for sprinkling.

# Instructions:

01 - Set your oven to 400°F and grease a mini muffin tray with 24 cups.
02 - Stir together the mashed potatoes and beaten eggs, fold in 3/4 cup of cheese, toss the chopped chives in, and season with a little salt and pepper.
03 - Scoop the mixture into the tray cups and finish by sprinkling the rest of the cheese on top.
04 - Bake in the oven for about 15-20 minutes until perfectly golden. Let it cool for a few minutes, carefully take them out, top with chives, and enjoy while warm.
