Cheesy Broccoli Soup (Print Version)

# Ingredients:

01 - 3 garlic cloves, chopped up.
02 - 1/4 cup all-purpose flour.
03 - 1/2 teaspoon Dijon mustard.
04 - 1 yellow onion, diced.
05 - 2 cups veggie stock.
06 - 3 cups chopped broccoli.
07 - 4 tablespoons butter.
08 - Crunchy bread crumbs, optional.
09 - Black pepper to taste.
10 - 1 big carrot, sliced thin.
11 - 2 cups shredded cheddar cheese.
12 - 1/2 teaspoon salt.
13 - 2 cups milk or almond milk.

# Instructions:

01 - In a large pot, melt the butter. Toss in the onion, salt, and pepper. Cook for about 5 minutes, stirring, till it softens.
02 - Throw in the garlic and stir it around for a minute. Sprinkle in the flour and mix for 2 minutes till it turns golden. Slowly pour in the milk, stirring as you go.
03 - Mix in the stock, broccoli, carrots, and mustard. Let it simmer gently for 15-20 minutes till the broccoli is nice and tender.
04 - Toss in the cheese a bit at a time, stirring till it's creamy and melted. Taste it, and add more salt if needed. Sprinkle bread crumbs on top if you'd like.
