Easy Bourbon Chicken (Print Version)

# Ingredients:

01 - 3 lbs of chicken thighs.
02 - 3 tablespoons of cornstarch.
03 - 1/4 cup of chopped scallions.
04 - 1/2 teaspoon grated fresh ginger root.
05 - 4 cloves garlic, finely minced.
06 - 1/2 teaspoon crushed red chili flakes.
07 - 1/3 cup of apple juice.
08 - 1 1/2 tablespoons of honey.
09 - 1/4 cup packed brown sugar.
10 - 1/4 cup of ketchup.
11 - 3 tablespoons of apple cider vinegar.
12 - 1/4 cup plain water.
13 - 1/4 cup of bourbon whiskey.
14 - 1/4 cup soy sauce.
15 - Salt and black pepper to taste.

# Instructions:

01 - Toss all the sauce ingredients together in a bowl until blended.
02 - Place the chicken in the crockpot. Dump the sauce over it. Cook for 6-7 hours on low or 3 on high.
03 - Pull the chicken out and chop it into small pieces. Keep it warm for later.
04 - Stir cornstarch into 3 tablespoons of water. Turn the slow cooker to the high setting.
05 - Pour the cornstarch mixture into the sauce. Cover and let it simmer for about 10 minutes until it's thickened.
06 - Return the chopped chicken to the pot and sprinkle with scallions.
07 - Dish it out over some fluffy rice.

# Notes:

01 - Stick to regular soy sauce, not reduced sodium.
02 - You can also thicken the sauce in a pan on the stove.
