Blueberry Snack Squares (Print Version)

# Ingredients:

→ Dry Base

01 - 1/3 cup packed light brown sugar
02 - 1/4 teaspoon baking soda
03 - 3/4 cup plain flour
04 - 1/2 teaspoon ground cinnamon
05 - 1/4 teaspoon table salt
06 - 1 cup rolled oats

→ Wet Ingredients

07 - 6 tablespoons melted butter (unsalted)
08 - 1 teaspoon vanilla essence

→ Filling

09 - 1/4 cup white sugar
10 - 2 teaspoons cornstarch
11 - 1 cup of fresh blueberries

# Instructions:

01 - Preheat your oven to 375°F (190°C). Grab an 8-inch square pan and line it with parchment paper, making sure to leave some overhang so you can pull the bars out easily later.
02 - Stir together the oats, flour, brown sugar, baking soda, salt, and cinnamon in a mixing bowl. Pour in the vanilla and melted butter, then stir until it forms a crumbly dough.
03 - Take half of your crumb mixture and press it down evenly into the lined pan, making sure it’s nice and firm.
04 - Toss the blueberries, granulated sugar, and cornstarch in a bowl until everything’s coated thoroughly. Pour this mixture over the base layer.
05 - Sprinkle the rest of the oat mixture on top of the berries and press it down gently to keep it in place.
06 - Bake for 35-40 minutes, or until the top looks golden and the blueberries are bubbling. Let it cool completely in the pan before lifting it out using the parchment paper, then slice it into squares.

# Notes:

01 - If you want a zingy twist, add the zest of one lemon to the blueberry filling.
02 - For a nutty crunch, swap in some almond meal for part of the flour.
03 - Stored in an airtight container, these squares stay fresh for roughly 5 days.
