Beefy Alfredo Pasta (Print Version)

# Ingredients:

01 - 1 cup heavy cream
02 - Fresh parsley
03 - 1/2 cup chicken stock
04 - 1 medium onion, diced
05 - Salt and pepper to taste
06 - 1 teaspoon Italian seasoning
07 - 8 ounces fettuccine
08 - 1 pound ground beef
09 - 1/3 cup white wine
10 - 1/3 cup Parmesan, grated
11 - 1 tablespoon olive oil
12 - 1 cup mushrooms, sliced
13 - 2 garlic cloves, sliced

# Instructions:

01 - Bring a pot of water to a boil. Season it with salt. Once the pasta is tender but still firm, scoop out 1 cup of water and set it aside. Drain off the rest.
02 - Brown the beef after cooking the onion and garlic in oil. Toss in mushrooms, pour in the wine to scrape up the browned bits, then add the seasoning and stock. Lower the heat and mix the cream in last.
03 - Stir the cooked pasta into the sauce along with the Parmesan. Add the reserved pasta water a bit at a time if the mixture feels too thick. Sprinkle on parsley, then taste and adjust the seasoning.

# Notes:

01 - When using cream, turn the heat down.
02 - Skip the wine and add more stock instead if you'd like.
03 - Keeping pasta water makes your sauce better.
04 - Ground turkey works well as a beef swap.
