Ground Beef Rice Dish (Print Version)

01 - 1½ cups beef broth
02 - 1 cup long grain rice
03 - 3 cloves garlic
04 - 1 tablespoon Worcestershire sauce
05 - 1 medium red bell pepper, diced
06 - 10 ounces Rotel tomatoes with chilies
07 - 1 pound ground beef
08 - 1 medium yellow onion, diced
09 - 1 teaspoon pepper
10 - 1 teaspoon salt
11 - 1 cup cheddar cheese, shredded
12 - Optional: Fresh parsley for topping

# Instructions:

01 - Set a big skillet on medium heat and toss in the ground beef, garlic, salt, and pepper. Cook it up until the meat is browned and smells great. Scoop out any extra grease and put the pan back on the burner.
02 - Add your diced onion and red bell pepper to the meat. Let them cook for a few minutes, around 3-4, so they soften and release nice aromas.
03 - Pour in the rice, Worcestershire sauce, beef broth, and undrained Rotel tomatoes. Combine it well so all the ingredients settle in together for the flavors to blend.
04 - Crank up the heat to get it boiling, then lower it and cover the pan. Let it gently cook for about 20 minutes, enough for the rice to turn soft and soak in all the flavor.
05 - Remove the skillet from the stovetop and scatter the cheese over everything. Cover the skillet again and let it hang out for 5 minutes or so, just until the cheese is gooey. Sprinkle parsley on top if that's your jam!
