Start by setting your oven to 350°F so it heats up. Grab a baking dish, around 9x13 inches, and spray a little nonstick on it to keep things from sticking.

Throw your skillet on medium-high heat. Cook up the ground beef and onion together for about 10 minutes, stirring now and then, until the onion softens and the beef browns nicely. Add the garlic near the end and stir for a minute until it smells amazing.

Pour the tomato sauce into the pan with your beef. Sprinkle in the Italian seasoning, mix it up, and let it sit on the heat for about 5 minutes. Stir here and there, seasoning with some salt and pepper to get the flavor just right. Then set this aside for the next step.

Boil a big pot of water with some salt. Once it's bubbling, toss in the egg noodles and cook until they're soft but still a little firm when you bite. Drain thoroughly after.

In a big bowl, mix the sour cream with the cottage cheese until smooth. Stir in the cooked noodles, then sprinkle a bit of salt and pepper. Fold everything together so the noodles are coated in a nice creamy layer.

Scoop half the creamy noodle mix into your baking dish and spread it out. Pour half of the meat sauce over it. Repeat the layers one more time, ending with the meaty sauce on top.

Cover the top with shredded cheddar cheese. Pop the dish into the oven to bake for about 30 minutes, or until it’s bubbling and the cheese melts into a golden crust.
