Bowl Baked Oatmeal (Print Version)

# Ingredients:

01 - 1/2 cup (120ml) real maple syrup.
02 - 2 large eggs.
03 - 1 and 3/4 cups (420ml) milk, either dairy or plant-based.
04 - 1/4 cup (60g) mashed banana or unsweetened applesauce.
05 - 1/4 cup (56g) melted unsalted butter, let it cool for a bit.
06 - 3 cups (255g) rolled oats, the old-fashioned kind.
07 - 1 teaspoon vanilla extract, pure if possible.
08 - 1 teaspoon cinnamon, ground.
09 - 1 teaspoon baking powder.
10 - 1/4 teaspoon salt.
11 - 1 and 1/2 cups (225g) mixed berries, fresh or frozen (no need to thaw).
12 - Optional: 1/2 cup chopped pecans or walnuts for a crunchy topping.

# Instructions:

01 - Set your oven to warm up to 350°F (177°C), and move the rack to the lower part. Coat a baking pan (9×9 or 11×7 inches) with a nonstick coating or spray.
02 - In a big bowl, whisk everything together. Then pour all of it evenly into the greased pan.
03 - Add nuts on top—or mix them in—if you'd like a little more texture.
04 - Put in the oven and bake for 35 minutes. Take it out when the center is just about solid for softer oatmeal. If you'd rather it be firm, keep baking until it sets completely.
05 - Let it sit for 5 minutes to cool before digging in. Serve with some yogurt, if you fancy.
06 - Pack up any extras and keep them in your fridge. They'll stay good for up to a week.
