Baked Beef Tacos (Print Version)

# Ingredients:

01 - 1 lb of lean ground beef (85-90%).
02 - 2 tbsp of your favorite taco seasoning.
03 - 1/2 cup of water.
04 - 3 minced garlic cloves.
05 - Juice of 1 lime.
06 - 4 oz of green chiles, diced.
07 - 8 oz of colby jack cheese, shredded.
08 - 8-10 small corn tortillas.
09 - 1/2 to 3/4 cup of Mexican crema.
10 - 2 chipotle peppers in adobo sauce.
11 - 1 tsp of honey.
12 - 1 garlic clove.
13 - Juice from half a lime.
14 - Cooking oil for brushing.

# Instructions:

01 - Heat oven to 425°F. Grease two baking pans. Cook the ground beef, remove grease once browned.
02 - Toss in garlic, lime juice, taco seasoning, chiles, and water. Let it cook down until liquid is gone. Mix in one cup of cheese.
03 - Warm up the tortillas until pliable. Spoon beef onto one side, sprinkle extra cheese, fold over, and rub lightly with oil.
04 - Bake for 15 to 20 minutes, or until they’re nice and crispy.
05 - Blend all crema ingredients together until it’s nice and smooth. Use it as a dip or drizzle.

# Notes:

01 - Don’t overstuff the tortillas.
02 - Store in fridge for up to 3 days.
